I guess since KS4 was my first experience with DF, I don't have that impression. Plastic is plastic, and lighter and more rigid is better for me: cheaper to ship and easier to transport. I like the dwarvenite G. None of my G pieces have any problems, it looks the same, and it doesn't warp. I don't get the hate for DWG.

The parapets don't hold towers very well. I think they would probably work ok if you just put crenelations on them. They do hold up two levels of towers, but barely and it was pretty unstable. Still, for certain layouts it could work. (e.g. if they were at the back of the castle where they don't get...

Yeah, I have both these issues as well. Especially the levers. To get a reasonable number of levers I need to buy a $120 encounter or whatever it was.

I think you'll probably find the Count's Castle fairly intuitive to build. It's nice and compact. I thought so too, but I still haven't figured out. The castle is easy, the towers, not so much. Things don't fit together well: the towers don't seem to have a large enough diameter to cover the corner...
