I think your instincts are correct. From what I've seen of old/ancient multicoloured stonework, generally the mortar is light coloured. I've been using Cross Border Pickups for the past year. If you live within driving distance of the GTA, you can just pick up your packages direct. They're shipping rates are usually a flat rate.
